Menu Plan Monday – 4/26/2010

I can’t believe the month of April is almost over. I am truly enjoying menu planning. It reduces the guesswork of figuring out what to cook every night. And, it’s been a blast trying new recipes and foods. I have found that menu planning also helps me be more organized when I go to grocery shopping. It’s a more streamlined process.
Here’s what I’ll be whipping up in my kitchen this week:
- Monday: Salisbury Steaks and roasted vegetables
- Tuesday: Pasta Salad with Shrimp, Peppers & Olives
- Wednesday: Healthified Bean and Salsa Chicken Wrap (I’ll probably serve a simple side salad with this)
- Thursday: Vegetarian Taco Salad
- Friday: Mediterranean Turkey Burgers
- Saturday: Broiled Tilapia with Thai Coconut Curry Sauce (Can you believe this is a Weight Watchers-friendly recipe?)
- Sunday: Coffee-Braised Pot Roast with Caramelized Onions
